B's Chicken Salad
Ingredients
- chopped rotisserie chicken
- green onion
- mayo (I used Chosen Foods. No seed oils too!)
- finely chopped red onion
- finely chopped celery
- cilantro
- salt and pepper
Instructions

Add all ingredients to a bowl and mix well.
- I purposely didn’t give exact amounts because it doesn’t matter and you can tailor it to your liking. You could make the chicken yourself or you could grab one already made at the store. When we prep this, we do about 2-3 chickens because we eat it so fast!
- Think meal prep, appetizer for a party, anything really. Serve with your favorite crackers, make a sandwich, just a protein option on it’s on, a wrap, on a charcuterie board…whatever!
