Chocolate Protein Banana Bread

Ingredients

  • 2 cups gluten-free flour (we used Krusteaz All Purpose Gluten Free Flour)
  • 1 scoop Equip Chocolate Prime Protein
  • 1 ½ tsp baking powder
  • ½ tsp fine salt
  • ½ tsp baking soda
  • 7 Tbsp butter, melted (We used Dairy-Free Violife)
  • ½ cup coconut sugar
  • 1 ½ tsp pure vanilla extract
  • 2 large eggs
  • 4 ripe spotted bananas, mashed
  • ¾ cup chocolate chips (we used Enjoy Life Mini White Baking Chips—they are dairy-free & gluten-free)

Instructions

  • Preheat the oven to 350 degrees.
  • Spray a loaf pan with cooking spray or line with parchment paper for easy removal. (I used a mini loaf pan that I love... see link below.)
  • In a mixing bowl, combine the flour, baking soda, baking powder, and salt. Then mix.
  • In a different bowl, mix together the butter, sugar, eggs, and vanilla.
  • Add the dry ingredients to the wet ingredients bowl, then add in the mashed bananas. Stir until well combined. Fold in the chocolate chips.
  • Pour the batter into the loaf pan. Bake for 30 minutes or until a toothpick inserted into the center comes out a little moist.
  • Do yourself a favor and taste it while it's hot!
