Chocolate Protein Banana Bread
Ingredients
- 2 cups gluten-free flour (we used Krusteaz All Purpose Gluten Free Flour)
- 1 scoop Equip Chocolate Prime Protein
- 1 ½ tsp baking powder
- ½ tsp fine salt
- ½ tsp baking soda
- 7 Tbsp butter, melted (We used Dairy-Free Violife)
- ½ cup coconut sugar
- 1 ½ tsp pure vanilla extract
- 2 large eggs
- 4 ripe spotted bananas, mashed
- ¾ cup chocolate chips (we used Enjoy Life Mini White Baking Chips—they are dairy-free & gluten-free)
Instructions
- Preheat the oven to 350 degrees.
- Spray a loaf pan with cooking spray or line with parchment paper for easy removal. (I used a mini loaf pan that I love... see link below.)
- In a mixing bowl, combine the flour, baking soda, baking powder, and salt. Then mix.
- In a different bowl, mix together the butter, sugar, eggs, and vanilla.
- Add the dry ingredients to the wet ingredients bowl, then add in the mashed bananas. Stir until well combined. Fold in the chocolate chips.
- Pour the batter into the loaf pan. Bake for 30 minutes or until a toothpick inserted into the center comes out a little moist.

Notes
- My husband does not like bananas and he LOVED it.
- I believe you can use Bob’s Red Mill 1-to-1 or King Arthur Measure for Measure. Both should do well also.
