Higher Protein Egg Bites

Ingredients

  • 9 to 10 large eggs
  • 1.5 cup cottage cheese
  • ½ cup cheese
  • ¼ tsp salt
  • ⅛ tsp pepper

Plus whatever mix-ins you want! Some Ideas: bacon, diced peppers, spinach, sausage, diced onions, mushrooms, turkey bacon, diced tomatoes, small pieces of broccoli.

Get creative with your mix-ins! I do encourage to try new things/variations. I like to cook them first, but it’s up to you! 

Instructions

  • Spray a muffin pan lightly and heat the oven to 350°F.
  • Add the eggs, cottage cheese, cheese, salt, and pepper to a blender and blend until smooth. (If you don’t want to blend, you don’t have to but I like it that way!)
  • Divide the egg mixture into the cups of the muffin pan, filling each cup just over halfway. Add your mix-ins on top, if using.
  • Bake for 20-22 minutes and allow the egg bites to cool before you pop them out. 

Notes

  • Cheese brings a creaminess to the bites that enhance the flavor. Cheddar, mozzarella, feta, goat, gruyère
  • If you are refraining from dairy, then disregard this recipe
