Oven Baked Chicken Bites

Ingredients

  • 1 pound chicken breast
  • 1 tbsp olive oil
  • 1 tsp salt (your salt does matter)
  • 2 tbsp grass-fed butter
  • 1/4 tsp fresh ground peppe
  • 1/2 tsp paprik
  • 1/8 tsp cayenne pepper
  • 1/2 tsp garlic powder
  • 1/2 tsp onion powder
  • 1 tsp Italian seasoning

 

Instructions

  1. Preheat your oven to 420°F. Cut chicken into 1- inch cubes.
  2. In a bowl, combine all seasonings. Arrange chicken in a baking dish and sprinkle with the seasoning mix. Drizzle a tablespoon olive oil and toss chicken cubes with the seasoning to coat on all sides. Speck seasoned chicken with butter cubes (see picture)
  3. Bake seasoned chicken for 15-17 minutes, or until internal temperature reaches 160-165°F. After 8-10 minutes, stir the chicken bites with a spoon for even baking. Once done, the chicken bites should be golden with crisp edges. For crispier chicken bites, switch to broil on high for the last 2-3 minutes of cooking until golden.

I know I will get butter comments so I will educate on it now. It's important to note that saturated fat has gotten a bad wrap over the years due to a large push from anti-fat campaigns which was heavily influenced by the fats and oil companies who at the time were involved in media and government. Aka load you up with seed oils. Scientists finally admitted that butter is actually good for you in other areas too. It’s high in a compound call CLA that protects you from tumor growth & cancer, is not
inflammatory like man-made oils from corn, canola or soy, and provides a nice dose of Omega 3 fatty acids, if you get it from the right source. But finding the right source can be tricky given all the buzz words and fancy marketing these days. Choosing the wrong type of butter can secretly ruin your health without you even knowing it. Choose REAL, grassfed butter.
