Strawberry Cheesecake
Baked Oatmeal
2 large eggs
3 tbsp oil (I used Extra Light Olive Oil)
1 cup sugar
1 cup milk of your choice (raw milk works great)
1/2 cup unsweetened applesauce
2 tsp vanilla extract
1 tsp ground cinnamon
1/2 tsp sea salt
3 cups old fashion rolled oats (THEY MUST BE ROLLED)
3 cups of sliced strawberries
2 tsp baking powder
For the cheesecake drizzle:
4 oz. cream cheese -softened to room temperature
3 tbsp powdered sugar
1 tbsp milk of your choice
1 tsp vanilla extract
Instructions
Preheat oven to 350° F and spray a 9x13 baking dish.
In a large bowl, mix together the eggs, oil, and sugar. Whisk until the sugar is dissolved. Add the milk, applesauce, vanilla, cinnamon, and salt. Whisk until well combined. Add the oats, strawberries, and baking powder. Stir until the oats are well coated in the liquid.
Pour the oats into the prepared baking dish and spread into an even layer.
Prepare the cheesecake drizzle. In a small bowl add the softened cream cheese, powdered sugar, milk, and vanilla. Whisk until well combined. This should be thin enough to slowly pour. If it’s too thick, add more milk, or microwave for a few seconds.
Drizzle the cream cheese mixture back and forth (in a zig zag motion) on top of the oats.
Bake for 30 mins and check it...It could go for 40 mins if you are eating it right then and there. If you use it for meal prep, stop it at 30 mins.
